It's been a while so I thought I better sit down and write up what I've been making. I usually make a new dish every week, so there's been some things in the works. Sometimes I forget to take a final pic too! Total rookie move!
Pineapple & Chicken Fried Rice

We are big fried rice fans and around here. I added chicken to this pineapple fried rice recipe, and I was going for true authenticity, so I used sauce option 1 - fish sauce & oyster sauce.
Pork Satay -

I really liked how the meat was cut in this one, and the recipe called for a small chile and I had some dried arbol chilies, I'm not really sure what difference that makes but I liked the sauce.

For this one, I didn't have any Asian pear, but I'm not sure that would have made a difference. I can't pinpoint why I didn't love this dish, I'm too much of a rookie, but it could have been since the meat was very thin, I could have overcooked it and maybe it shrank down too much rendering everyone a litl to salty Something to be careful about.

We love noodles and this did not disappoint. It's a pretty basic recipe, and a great one to make when you don't have any fresh Thai basil to make the other delicious noodle dishes you might want (I always love me some Thai basil whenever possible).
Beef Chow Fun
This is another Jet Tila recipe from the book 101 Asian Recipes You Need to Cook Before You Die. He has the recipe on his website but it's slightly different.

I'm a big Jet Tila fan, but this recipe was too salty and too oily for my liking.

This definitely has that lol mein flavor I was looking for. I live when something comes out so good you're like "I should open a restaurant" even though you've been cooking a foreign cuisine for less than a year and have a sum total of like 3 dishes you're really proud of. 🤣 Oh and no final pic on this one.
