My Asian cooking journey began about 5 months ago when I moved up to the woods of Maine. Prior to that, I had been faithfully visiting my favorite Thai restaurant at LEAST once a week, but now, to my horror, there were NO THAI FOOD RESTAURANTS within 40 minutes of my new abode. What's a girl to do but make her own? I began scouring the internet for Pad Kee Mao/Drunken Noodles recipes, put together a list of ingredients and began shopping. Once I gathered all the ingredients, through a combination of Amazon, the Asian & Thai markets in Portland, and a few other smaller online businesses, I bought a wok and began cooking. The wok story is another post, but the problem I ran into is that I could not emulate the recipe from Daw Kun Thai in Manchester, NH (the best Thai in the Manchester area in my opinion, and I've been around Thai-wise). I tried tweaking the recipe with this ingredient and that, but it's not been the same. I was about to give up, but I had all these ingredients. I began to search for other recipes I could make with some of these ingredients, and before I knew it, I was buying even more, and looking up new recipes and my love for Asian cooking was born. I find it amazing sometimes that someone that's only been cooking these dishes for a short time can make some restaurant quality food right in their own kitchen, and they don't need every kitchen gadget either.
I hope you will find some of the recipes interesting, and want to try them yourself. I will share where I sourced the ingredients, and anything that went right or wrong so that you can learn with me from my mistakes. These are my versions of the recipes, so don't be surprised if it's missing something you expected to be in there, and always feel free to tweak it and make it your own.
