It took me a while to write this because I wasn't really sure I wanted to. I didn't particularly enjoy either of the recipes I tried, but I think it's simply a matter of taste. I guess I'm realizing that I don't really like kimchi that much, not do I enjoy a lot of curry flavor.

The rice was really good, fried rice is now one of my favorite things to make. I live how the rice picks up the oil and sauces, and I live that you can throw a protein in and make it a one pot meal. And the sauce on this one is so simple, just soy sauce and sugar & salt. Easy peasy. And you don't need a lot of added veggies since you have the kimchi going in, so not a lot of chopping to prepare, just an onion and some garlic.
Now the chicken. What I'm finding is that there are many recipes for Thai BBQ chicken. The one I used calls for curry powder. Now this gets complicated for me. Curry powder by it's very definition is a spice mix. So did I use the right combination of spices to make it perfect, that's the question. Thai and Indian curries are different, so that could have been my first problem. On top of that I let it marinate 2 whole days because something came up on cooking day. Whether that made the flavor even stronger is another pressing question. Some of these chicken recipes use a red curry paste, and since don't use curry at all, so it's definitely worth another try for me in the future. This one was a very strong curry flavor for me, I just couldn't enjoy it. It was easy enough though, just marinate, bake and grill at the end of you want to. If you love curry, it's a must try for sure.
